How to Cook Welsh Lobscouse

Eat Welsh lamb and Welsh beef: https://eatwelshlambandwelshbeef.com/find-a-butcher/ In English (Sgroliwch i lawr am y disgrifiad a'r rhestr gynhwysion yn Gymraeg): In this video I demonstrate how to cook Welsh lobscouse, a delicious and comforting one pot meal of Welsh lamb and vegetables. Lobscouse has its origins in Norwegian lapskaus, a dish of fish and vegetables brought to our shores by Norwegian Vikings, fishermen and traders. It then underwent a transformation where the fish was replaced by mutton, and now in modern times, lamb. Lobscouse is a very simple and uncomplicated dish, and it loses authenticity when you start to add more exotic ingredients and use complicated cooking processes. There should be no garlic in lobscouse. Keep it simple! The use of lamb and leeks identifies it as Welsh lobscouse. Liverpudlian scouse soup is a close cousin, usually prepared using beef. Liverpudlian scouse is often served with pickled red cabbage or pickled beetroot as a garnish. Ingredients: 700g lean stewing lamb or 1kg lamb on the bone i.e. scrag end of neck or breast of lamb. 500g brown onions, peeled and diced 400g carrots, peeled and diced 100g celery, finely chopped 4 tablespoons of lard or oil for frying 1.5l lamb or beef stock 300g leeks, finely chopped 500g floury potatoes, peeled and diced 500g swede, peeled and diced 100g garden peas, fresh or frozen Salt and white pepper to taste Note: All measures for meat and vegetables are totally flexible, feel free to add more or less of anything according to your taste or availability. The ratio of meat to vegetables can be anything between 1:3 and 1:5. Enjoy!

How to Cook Kedgeree with Smoked Haddock | British Indian Breakfast Rice

Kedgeree is one of my favourite rice dishes. I believe it has it's origins in the British Raj in India. I know it came to fashion in Britain during the 19th Century, probably as a result of returning expatriates wanting to duplicate the best of Indian cuisine here at home in the UK. Kedgeree is usually served for breakfast, but it also makes for a tasty light lunch or evening meal. My version uses smoked haddock, but any good smoked fish works well, even smoked oily fish like mackerel and herring. Ingredients: 440g smoked haddock fillets. 250ml chicken stock. 250ml water. 1 bay leaf. A small stick of cinnamon/cassia bark. Half a medium onion. Oil for frying. 3 cloves of garlic. 1 teaspoon of curry powder. 1 teaspoon of turmeric powder. A quarter teaspoon of black pepper. Half a teaspoon of ginger powder. 380g/2 cups of basmati rice. Hot water as required. 120g frozen garden peas. Garnish: 2 hard boiled eggs, quartered. Salt and freshly-ground black pepper. Fresh or dried parsley. Finely chopped spring onions (optional). Lemon wedges (optional). Fried onions (optional). NO CHEESE. NOT EVEN A LITTLE! 😄 Time Stamps: 00:00 Intro 00:55 About kedgeree 01:51 Ingredients 04:17 Poaching the smoked haddock 06:55 Cooking the rice 14:28 Flaking the smoked haddock 17:30 Chopping the eggs 17:55 Assembling the kedgeree 18:54 Dressing the kedgeree 20:52 Taste test 22:15 Summary slideshow 23:50 End credits and links *** Remember to check the info cards for links. How to Cook Bacon-Wrapped Stuffed Chicken Breast 😋

In this video I demonstrate how to cook my bacon-wrapped stuffed chicken breast, a delicious meal for any occasion. The stuffing is breadcrumbs, onion, smoked bacon and mushroom. Ingredients: 2 large chicken breast fillets. 4 or more rashers of bacon. 4 cocktail sticks. For the stuffing: 1 slice of dry bread. A quarter of a brown onion, chopped. 5 mushroom stalks or two mushrooms, chopped. 1 rasher of smoked bacon, chopped and fried to a crisp. Salt and freshly-ground black pepper to taste. King Prawn Curry with Petits Pois | Jumbo Shrimp Curry with Peas

In this video I demonstrate how to cook my king prawn curry with petits pois. The sweetness of the king prawns is enhanced by the yielding sweetness of the petits pois to build a real taste sensation in this delicious jumbo shrimp curry with peas. Ingredients: 360g fresh or defrosted frozen king prawns/jumbo shrimp butterfly-cut. For the curry paste: 8 cloves of garlic, peeled. A thumb-sized piece of fresh ginger, chopped. 3-5 red bird-eye chilli peppers. 2 tablespoons of vegetable oil. 2 tablespoons of curry powder. 3 tablespoons of vegetable oil for frying. A scant teaspoon of panch poran. A pinch of curry leaves. 100ml water. 2 heaped teaspoons of creme fraiche or sour cream. 500ml tomato passata. 300g petits pois or garden peas. 1 teaspoon of sugar. Half a teaspoon of garam masala. A slack handful of freash coriander/cilantro as garnish. Serve with saffron rice: https://youtu.be/g6gOps30_9E Method: See the video! Enjoy!
